Omega-3 fatty acids are thought to provide many health benefits, from reducing cardiovascular disease to improving mental health, resulting in increased consumer interest in foods enriched with these fatty acids. Formulating a product enriched with these fatty acids that is stable and has an acceptable flavor is challenging. This book aims to provide the reader with a comprehensive overview of current research on the entire chain, from production and refining of omega-3 oils to their applications in different foods, including the possible health benefits.
